1 c. whole milk
1 1/4-ounce package active dry yeast
1 tbsp. pure maple syrup
6 tbsp. unsalted butter, at room temperature
2 3/4 c. all-purpose flour, plus more for the surface
1 1/2 tsp. kosher salt
1 tbsp. fresh thyme leaves
1 tsp. sea salt flakes

- In a small microwave-safe bowl, heat milk until warm to the touch. Stir in yeast and maple syrup and let sit until frothy, about 10 minutes.
- Meanwhile, cut 3 tablespoon butter into small pieces. In a medium bowl, whisk together flour and kosher salt. Make a well in the center and add milk mixture and chopped butter. Using a wooden spoon, gently stir just until incorporated (the mixture will look shaggy). Transfer to a lightly floured work surface and knead until smooth, 5 to 6 minutes.
- Transfer dough to a lightly oiled large bowl and cover with plastic wrap. Set in a warm place and let rise until doubled in volume, about 45 minutes.
- Lightly oil an 8-inch square cake pan and line with parchment so there are overhangs on two sides. Cut dough into 16 pieces and, working 1 at a time, roll each piece into a ball and transfer to prepared pan, seam side down. Cover with plastic wrap and let rise until puffed and dough does not bounce back when gently poked with a finger, about 30 minutes.
- Heat oven to 350°F. Melt remaining 3 tablespoon butter and gently brush half of it over tops of rolls. Bake until puffed and lightly golden brown, 38 to 42 minutes. Brush with remaining melted butter and sprinkle with thyme and sea salt.
